Restaurant Director, George V

We are seeking a Restaurant Director to manage the George V restaurant, our fine dining offering, and ensure all team members to deliver excellent guest service to a Forbes 5-star level and in line with Red Carnation Hotel standards on a daily basis.

Your main responsibilities as a Restaurant Director are to deliver the ultimate fine dining experience; manage the service flow and all aspects of the operations; ensure the ultimate dining experience is achieved; take ownership and manage budgets to achieve financial goals; create staff rosters to ensure appropriate staffing levels and manage accordingly in line with business requirements; hire, train and supervise restaurant employees, including employee development; process payroll and maintain all relevant records; provide exceptional, anticipatory service to all guests and communicate feedback to both the management and George V team; track stock levels of food, supplies and equipment, forecast needs and oversee ordering; address customer needs, comments and complaints; adhere to and enforce employee compliance with health, safety and sanitation standards; create reports on all financial performance, inventory and personnel; and act as a role model for all associates by displaying a positive approach through training, inspiration and motivation.

What are we looking for in a Restaurant Director?

  • Have previous restaurant management experience of  2 Rosette standard or similar
  • Previous experience working at Forbes 5 Star and/or Leading Hotels of the World hotel preferred
  • Hospitality Degree and WSET Level 3 desirable
  • Excellent interpersonal and communication skills
  • Excellent organisational skills and ability to multitask and prioritise effectively to meet required deadlines
  • Excellent attention to detail
  • Be self-motivated and prepared to work on own initiative
  • Possess good judgement skills, and the highest degree of integrity and confidentiality
  • Be able to work well under pressure – High volume of work in fast paced environment
  • Possess a strong knowledge and passion for food & beverage
  • Good ability to manage all cost controls e.g. food cost, labour etc.
  • Experience of staff training, rotas, financial reporting, stock control and ordering
