You enjoy collaborating with team-mates, leading them, and making sure that the bar runs seamlessly. As Assistant Bar Manager, you’ll help manage and lead all bar operations to deliver the financial success of the Food & Beverage function.
Key Deliverables and Responsibilities
- To lead the Bar department and execute the strategy to achieve department goals.
- To support the Food & Beverage Manager/GM in the strategic running of the hotel Bar.
- To review and report staff performance
- To retain and develop employees
- Manage all training from on-boarding through to development
- Managing Staff and delegating duties
- Deliver departmental monthly meetings
- Attend weekly management meetings
- To engage in the recruitment process by partaking in interviews, overseeing trials and making hiring decisions
- To ensure new staff are fully trained and supported during on-boarding period
- To ensure all staff are up to date with IACT training
- Manage correct set-up and service of Bar, floor, lobby and glass corridor for all service times and ensure consistency at all times
- Hands on approach to service required
- Support Restaurant in absence of Restaurant management
- To maximise profitability and identify new sources of revenue and product development
- To create and develop new beverage menus
- Liaison with Sales and Marketing on the beverage promotional programme for the year ensuring profitability
- Attend monthly commercial meetings
- Produce beverage package/ deal ideas
- Support/Oversee events in the hotel to ensure excellence in service at all times.
- To liaise with reservations parties to ensure all booking requirements for F&B are correct and delivered.
- To effectively manage and forecast staff rosters, to finalise rosters and then rectify variances going forward
- To be responsible for payroll costs for department and to ensure they are meeting their forecasted payroll costs
- To ensure all shifts are inputted correctly into Alkimii and are signed off.
- Cash handling and control
- Management and control of stock
- Complete requisitions to replenish shortages or additional items needed for the anticipated business.
- Responsibility for all beverage purchases, inventories and stock levels within the operation
- Ensure all beverage deliveries are checked, signed in and accepted on hotels procurement system
- Work closely with HR to ensure compliance with licensing regulations, health & safety, employment regulations and other statutory regulations.

Professional requirements and Experience:
- Proven track record from a similar role with emphasis on Food & Beverage leadership from a Bar/Hotel in Ireland
- Hospitality/ Event Management Degree desirable
- Must be flexible in terms of working hours
- Fluent in English written and verbal
- HACCP
